La Quercia, LLC, family owned and operated, makes high quality, artisanal dry-cured pork -- prosciutto, pancetta, coppa, speck, guanciale, and lardo. The meat we use comes from family farms raising their animals sustainably -- no confinement operations, no sub-therapeutic antibiotics. We use only pork, sea salt, and organic spices -- no nitrites or nitrates, no vegetable substitutes. Our meats are available at fine restaurants and delicatessens and a range of supermarkets across the United States and Canada.
